This continues our slow shift toward the southern Huila season, and the exploration of the new Santa María region. In the cup we find bright red berries, lime, and wildflower honey.

This is a continuation of our ongoing project in Santa María. Eulises is a new producer on this project, and it is fulfilling to see it continue to grow, with more producers interested in participating. He farms a small plot of Pink Bourbon, and we look forward to visiting him on our next trip to Colombia. We are grateful to Eulises and to everyone involved in Santa María for bringing this coffee to fruition.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
